Use it to prepare Edomae style sushi by mixing it with cooked rice (10 % of vinegar per volume of rice).

Founded in 2008, Tajima Brewery, located in Yabu, Hyogo Prefecture, relocated to the former Nishitani Elementary School after it closed. Beyond vinegar production, the company actively engages with local communities by hosting tasting events and collaborating with restaurants to incorporate its products into local cuisine.

 

Through its initiatives, it establishes a direct connection with its customers and makes a point of maintaining close relationships with the community. Its goal: to make its products easily accessible and strengthen their anchoring in local customs.
