KEY INGREDIENTS
Sesame
Sesame (Sesamum indicum) is an oilseed widely used in Japanese cuisine, in the form of whole seeds, oil or paste (neri-goma). It provides a nutty, umami flavor, and is often used to season dishes, particularly salads, noodles, sauces and sushi. There are three main varieties: white, black and golden.
Kujo Negi
Kujo Negi (Allium fistulosum) is a Japanese variety of spring onion native to Kyoto. Appreciated for its mild, slightly sweet flavor, it is often used in traditional dishes such as ramen, miso soup and okonomiyaki. Unlike the classic green onion, Kujo Negi is softer and richer in umami.
Ginger
Ginger is a root widely used in Japanese cuisine, both for its fresh, pungent aroma and for its digestive and antiseptic properties.
