Shindo Shigeharu Shoten, the company behind the Miyone brand of candied citrus peels, is a 2nd-generation owned family business located in the town of Shikokuchuo in Ehime prefecture. Mineo Shindo, the current owner, is proud of the company's handmade candied citrus peels made with fruits from local farms. The company's philosophy is to use organically grown or low-pesticide fruits to highlight the best of the citrus's natural flavors.
The citrus transformation process is simple: the peels are cut, washed and candied by hand in a process that takes 2 1/2 days. The finished product contains just 4 ingredients: fruit, sugar, glucose syrup and vitamin C, giving it an excellent balance of sweetness, bitterness and acidity.
